Coconut Panna Cotta With Mixed Berries

Panna Cotta, literally translates as cooked cream in Italian, it's a traditional Italian dessert that is made with cream, milk, sugar, vanilla and gelatine. Panna Cotta is one of my ideal desserts: it’s very easy and quick to make and it can be made ahead of time. Overall it's a crowd pleaser. 
Confession time... .. I've never made a Panna Cotta before.  I know, I know, being from Italian background you would think I would be eating these all day long.  Wrong! Not even my Nonni (Italian grandparents) have made or tried it before. That's probably because the origin of the Panna Cotta is from the North of Italy and my Nonni come from the South of Italy....near Naples.

I found this dessert light and indulgent. I decided to mix things up and make a coconut Panna Cotta. I substituted the milk for coconut milk.


Have I told you how much I love coconut? Well I do.

I loved making this dessert and I hope you do as well.

Ingredients

-400ml can coconut milk
-300ml thickened cream
-1 cup caster sugar
-1 vanilla pod (remove vanilla from pod)
-1/2 cup hot water

-1 tablespoon gelatine
-250g fresh strawberries, hulled, quartered
-150g fresh blueberries
-200g fresh raspberries
-Coconut chips as a garnsih

Method

Step 1., Place coconut milk, cream, 3/4 cup of sugar and vanilla into a saucepan over low heat. Cook, stirring for 3 to 5 minutes or until sugar dissolves (do not boil). Remove from heat.


Step 2. Place hot water into a small bowl. Sprinkle over gelatine. Whisk with a fork until dissolved. Add to coconut milk mixture. Whisk well to combine.


Step 3. Rinse 8 x 1/2-cup capacity dishes or moulds. Shake out excess water. Pour in coconut mixture. Cover. Or grab some fancy glasses and pour mixture in the glasses and later serve in the glasses Refrigerate for 5 hours, or overnight if time permits, until set.


Step 4.  Place strawberries, blueberries and raspberries into a bowl. Sprinkle with remaining sugar. Cover. Refrigerate for 30 minutes.


Step 5. Turn panna cotta onto plates. Serve with berries and coconut chips. Or top Panna Cotta with the fruit and coconut chips
